Everyone loves a good homemade cookie. There is something about it when they are shared amongst family and friends. I am known for these two great recipes and I always make them for holidays. Here is the recipe for two awesome cookies I make. Knot cookies and rainbow cookies...
2 cups flour
1 3/4 tsp. baking powder
1 stick butter- soften
3 eggs
3/4 cup sugar
Heat oven to 350. mix butter and sugar. add eggs. add flour and baking powder. Roll mixture into 1 inch balls and place on cookie sheet.
Cook 7-9 minutes on bottom rack, 7-9 minutes on top rack.
Remove from cook sheets when cool enough to touch. Completely cool on wire rack.
Icing- add milk to powdered sugar. a drop of vanilla.
Use a wisk to get clumps out. Should be pretty thick and on white side. I dip cookie in icing and when I have a few done I sprinkle the round sprinkles on them.

For rainbow cookies I use 3 cookies sheets that are the same size with the lip.
3 boxes of pound cake mix
Food coloring
3 capful of almond extract - divided
Red raspberry preserves
Melted semi sweet chips
Cholocate sprinkles - optional
Make cake as directed adding almond and food coloring to 2 of layers
Bake till tooth pick inserted comes out clean.
When cool spread preserves on two layers and assemble. Put cookie sheet ontop and phone books too. Refrigerate for a day. Next day pour and spread chocolate onto and add sprinkles. Let cool. Before chocolate sets cut into pieces.
